ALMOND CRUMB TOP MUFFINS BY EMMA

topping :
2/3 cup all-purpose flour
2/3 cup brown sugar
1tsp. cinnamon
4Tbs. unsalted butter, chilled, cut in small pieces
1/4 cup silvered almonds
1/4 cup raisins

Batter:
2+1/4 cups all-purpose flour
2tsp. baking powder
1tsp. baking soda
1/2 tsp. salt
3/4 cup sugar
1/ cup milk
1/2 cup sour cream
1/2 cup vegetable oil
1 egg
1 Tbs. orange zest

Topping : In a small bowl mix together flour, brown sugar and cinnamon.
Add to butter and mix with fingertips until well combined and crumbly.
Mix in almonds and raisins. Set aside. Preheat oven to 400°F.
Batter : In a large bowl stir together the flour, baking powder, baking soda and salt.
In a medium bowl whisk together the sugar, milk, sour cream, oil, egg and orange zest. Add to dry ingredients and stir just until blended. Spoon batter into muffin top pan, filling each about 3/4 full.
Sprinkle on topping. Bake until a toothpick inserted in center of muffin comes out clean, 15-18 min.
Cool in pan for 5 min., then remove. Makes 6 muffins.
